Believe it or not - This is NOT the salad Jennifer Aniston ate every day on friends, like the internet claimed! Nonetheless, it is extremely tasty and something I could definitely eat every day!
Ingredients
- 1 400g can of chickpeas, rinsed
- 1 medium sized cucumber, finely diced
- 1 cup of quinoa (uncooked)
- 1/4 cup flat leaf parsley, finely chopped
- 1/2 cup of fresh mint, finely chopped
- 1/2 medium sized red onion, finely diced
- 1 cup of crumbled feta
- 1/4 cup pistachios, roughly chopped
- salt & pepper, to taste
- 1/3 cup olive oil
- juice of 1 lemon
DRESSING
Directions
Rinse your quinoa and and place into a medium sized pot along with 1 1/4 cups of salted water. Bring to a boil and then reduce to a simmer - cook for around 20 minutes or until the quinoa is tender. Keep an eye on it as you may need to add a little more water.
- While the quinoa is cooking, prep all of the other salad ingredients and place into a large bowl.
- In a small jar or bowl, add the olive oil and lemon juice and mix well.
- Once the quinoa is cooked and slightly cooled, add it into the bowl with the other ingredients, season with salt & pepper.
- Pour over the dressing and mix well.This is a great salad to make ahead as it keeps well in the fridge! Enjoy!
