Valentine's Day Breakfast Granola Cups

These Granola cups are a perfect Healthy Valentine's Day Breakfast! They are super versatile as you can add whatever toppings you like and decorate them with all of your favourite things. If you don’t have heart pans you can use standard muffin tins which will make around 12-14 cups!
Ingredients

1 cup rolled oats

1/2 cup almond meal

1/3 cup desiccated coconut

1/3 cup coconut oil
-
1/3 cup honey
-
1 tbsp almond butter
-
1/2 tsp good quality of vanilla extract

1 tsp cinnamon

1/2 tsp sea salt

Greek yogurt
-
Your choice of fruit

Chia seeds

Honey

Nut butter

Directions
Pre-heat oven to 160°
Mix oats, coconut, almond meal, salt and cinnamon in a large bowl.
heat honey, coconut oil and almond butter in a small saucepan and mix until melted.
Pour the honey & coconut oil mixture over the oats mixture and mix well (the mixture will be a little loose)
Spray coconut oil or olive oil over your tray/tart pans and fill them with the mixture pressing down the bottom and up the sides of the tin.
Cook in the oven for 16-20 minutes (until golden brown)
Let them cool completely before removing them from the pans - This part is very important so the mixture doesn’t crumble.
Once cooled, fill them with Greek yogurt and your choice of toppings. Enjoy
